Do you remember the artist Black Eyed Peas?
Well we are going to talk about Black Eyed Beans also known as Lobia beans. These are highly nutritious, creamy-textured legumes with an earthy nutty flavor. They are loaded with protein, fiber and iron and generally low in fat.
As an Indian household I make a curry out of it that we eat with a bread (roti). Don’t stress at the name curry. This one is a quick recipe.
Let me take you on the journey to making Lobia Beans.
The recipe to Make a curry of lobia beans is very easy.
Soak the beans in water for 4-6 hours. You will see the beans pump up in size.
Once you see this you can pressure cook for 3-5 whistles. Make sure to let it sit in the steam for a while. Do not open the pressure cooker right away.
You can also use the instapot for this.
Once pressure cooked in a Pan saute Ginger , Garlic paste along with cut green chili and then saute Diced Onions and Tomato.
Add in the spices Turmeric powder, Cumin powder (jeera), coriander powder (dhaniya), red chili powder, and some garam masala powder.
I use one specific dicer that has stayed with me for so many years, does not break and dices the vegetables very minutely.
Once the Onions are cooked then add the beans. And cook for 10-15 minutes till the gravy becomes thick.
Garnish with coriander and drizzle some lemon.
Serve it with Fresh made Roti or rice.
