Have You Tried to eat Mushroom as your source of Protein

Ladies and Gentlemen. How are you? Its been a while since I started posting last and a lot has happened since then.

And I will talk to you about that in another post.

But this post is about Mushrooms. Mushrooms are nutrient-dense, low- calorie fungi that provide anti-oxidant protection against cell damage and improved heart health. They are rich in Vitamin B, Selenium, Potassium and Copper. They also provide a rare dietary Vitamin D that promotes bone health and reduces inflammation1.

But how do you make little kids eat mushrooms.

Try this recipe. It is basically a Paneer Recipe adapted for Mushrooms Primarily.

You would need some Mushrooms (but of course), some paneer, Onion, Tomatoes, Garlic, Ginger, Green Chili and some Basic Indian spices.

1)In a Pan Sauté Mushrooms First(I used frozen ones that tend to release a lot of water, you can use fresh ones) and then Paneer(soft cheese) separately in oil or butter.

2)In the same pan you can saute Onions (diced or cubed to your preference) and Tomatoes (diced or cubed) in oil or butter. To make it a little bit rich you can also add some cashew to it during this stage or heavy cream towards the end. Optionally you can also add whole sections of Garlic, Ginger and Green chilli here or a paste of the same. Once cooked let it cool and then blend into a mixture.

3)In the same pan in some oil add back the gravy made above and cook till it oozes oil from the sides (that tells us that the gravy is thoroughly cooked). Add the spices Turmeric Powder, Coriander Powder, Cumin Powder, Some Garam Masala, Red Chili Powder and salt to taste. At this point then add in some heavy cream (optional) and then the Mushooms and the Paneer cook for a few minutes and garnish with Cut Coriander and Kasuri Methi (optional).

You can eat this with Roti, Naan or Rotla. I made this recipe with Jowar (Sorghum) Rotla.

If you want to have this as a healthier option you can substitute the oil for Olive or Avocado Oil. And skip the Heavy Cream. Also try the Rotla especially the Jowar ones – They are gluten free and packed with protein, fiber, iron and magnesium.

This recipe worked for me for two reasons. One I had Mushrooms lying around in my Refrigerator and I had no idea what else to make. And two my entire family can eat mushrooms except my daughter who is still not used to it so I added some Paneer and it worked out fine for all.
